Are you sure they actually monitor the chat sessions? They are encrypted and you need some special software for this - not impossible but its not cheap and not every company can afford this. If they have opened skype and allow you access - I jolly well hope they are monitoring it.
Lots of data leakage can occur through this and its a security nightmare. I went and tracked down the policy. Here's their golden clause. Such monitoring power justifies an infraction of the privacy of the user. So basically, they can watch what you're doing via a hidden VNC, or whatever they please.
